Simmered Udon Noodles

Procedure
1 | Break the dried noodles into three equal lengths and blanch them. Rinse under running water to remove excess salt. Cut the spinach into 2cm-wide pieces and boil. |
2 | Cut the carrot into short julienne strips, slice the onion thinly lengthwise, and cut the pork into 1-2 cm wide pieces. |
3 | Pour the dashi broth into a pot, add the ingredients from step 2, and simmer. Once the vegetables are cooked through, add the seasonings and simmer further. |
4 | Place the noodles in a bowl, pour the broth from step 3 over them, and garnish with the boiled spinach. |
