Procedure

1 Soak rice for at least 30 minutes
2 Slice shimeji mushrooms 1 cm wide; finely chop the caps. Cut carrots into short julienne strips
3 Douse aburaage in boiling water to remove excess oil, then cut into short, thin strips
4 Add seasonings and the usual amount of water for cooking rice to step 1, then mix
5 Place steps 2 and 3 on top and cook rice
