Procedure
1 | Put mirin in a heatproof container and heat in a microwave oven at 600w for 50 to 60 seconds without wrapping. |
2 | Add miso, sugar, soy sauce, oil, potato starch, and water to 1. Heat in a microwave oven at 600w for 30-40 seconds without wrapping to thicken. Remove from heat.*If making larger quantities, heat steps 1-2 on the stove. |
3 | Preheat oven to 230℃ (446℉). |
4 | Place salmon on a tray and mix in 2/3 of the combined seasonings. |
5 | Place the salmon on a baking tray lined with parchment paper. |
6 | Place a tray of hot water in the oven and bake at 230℃ (446℉) for 10 minutes. |
7 | Remove, brush with the remaining sauce and bake at 230℃ (446℉) for 5 minutes. |
8 | *This recipe is the temperature when using frozen salmon. |
9 | *If using raw fish, make the same recipe with the oven temperature at 200℃ (392℉). |
