Procedure

1 Chop the cabbage and rub with salt.Let sit for at least 15 minutes to let the salt blend in. Squeeze and drain well.
2 Add panko, skimmed milk powder, beaten egg, salt and pepper to minced pork and knead well until sticky.
3 Add 1 to the mixture, mix well, and form into a round by alternately beating the mixture between the palms of your hands to release the air.
4 Dip in batter solution of flour, beaten egg and water, then in panko.
5 Place in oil at 338°F (170°C) and fry for 7 minutes, turning occasionally.
6 Pour tonkatsu sauce on top.
