Procedure

1 Cut the tofu into 1.5 cm cubes. Boil in hot water, then drain in a colander once the tofu floats to the surface.
2 Finely chop the carrot and green onion.
3 Heat sesame oil in a pot, add the chopped vegetables, and stir-fry well. Add the ground pork and stir-fry.
4 Add water, sugar, miso, soy sauce, and salt. Simmer.
5 Add the tofu from step 1. Bring to a boil, then reduce heat. Thicken with potato starch dissolved in water.
6 Serve over cooked rice.
7 【Cooking Note】Blanching the tofu prevents it from falling apart during simmering.
