Procedure

1 Soak the dried tofu until rehydrated, then cut into 1cm cubes. Cut the chicken into 1cm pieces. Slice the carrot into thin half-moons and thinly slice the onion lengthwise. Quickly blanch the green peas.
2 Heat oil in a pot, add the carrot and onion, and stir-fry well. Add the chicken and stir-fry.
3 Add the dashi broth, rehydrated tofu, sugar, soy sauce, and salt. Simmer until tender.
4 Pour in the beaten egg in a circular motion and heat until fully cooked. Add the green peas. Serve over cooked rice
