Procedure

1 Soak the dried tofu in water to rehydrate, then squeeze out excess water. Finely chop in a food processor.
2 Finely chop the carrot.
3 Heat oil in a frying pan, add the carrot, and sauté well.
4 Add the ground pork and the prepared dried tofu from step 1, stir-fry, then add the dashi broth, sugar, and soy sauce, and continue stir-frying.
5 Serve over cooked rice.
