Procedure

1 Coat the fish with flour.
2 Heat oil to 170°C(340°F) and deep-fry fish for 7 minutes (if using raw fish, deep-fry at 170°C (340°F)for 3-5 minutes).
3 Put water, mirin, sugar, soy sauce and sake in a separate pot and heat over low heat to a boil.
4 Add the fried fish and coat all with the sauce.
5 Put the fish on top of cooked rice and pour the sauce left in the pot on top. Put white sesame seeds and chopped green onions if desired.
