Procedure

1 Fill a saucepan with plenty of water and heat. When water comes to a boil, reduce heat to low and gently ladle in an egg fresh from the refrigerator and boil for 12 minutes.
2 As soon as the eggs are boiled, place them in ice water and wait 5 minutes.
3 Crack the eggs on all sides and peel the shells under running water. Wipe the surface of the eggs thoroughly with kitchen paper.
4 Open the egg with your hand and separate the yolk from the white.
5 Place yolks in a fine-mesh colander and strain through. Add all seasonings and mix until smooth.
6 Roughly chop the whites, add to bowl of 5 and mix well.
7 Spread butter on two slices of bread and place the eggs so that the center is high. Spread the egg over the entire surface. Place another slice of bread on top and press down lightly with your hand to settle.
8 Wrap in plastic wrap and refrigerate for 20 minutes to blend the egg and bread. Remove plastic wrap and cut in half.
