Procedure
| 1 | Break the dried noodles into thirds and boil them. Rinse under running water to remove excess salt. Cut the pork into 1-2 cm wide strips, slice the carrot into thin half-moons, thinly slice the onion lengthwise, and cut the bean sprouts into 2 cm lengths. |
| 2 | Cut the spinach into 2 cm lengths and boil it. |
| 3 | Add the dashi broth, carrot, and onion to a pot and bring to a boil. Add the bean sprouts and pork and simmer until tender. |
| 4 | Add the seasonings and simmer further. Finish by adding the potato starch slurry and mixing to thicken. Place noodles in bowls, pour the soup from step 3 over them, and top with the vegetables from step 2. |
