Procedure
1 | Break the dried noodles into thirds and blanch them. Rinse under running water to remove excess salt. |
2 | Cut the carrot into short julienne strips, slice the onion thinly lengthwise, and cut the pork into 1-2 cm wide pieces. Pour boiling water over the fried tofu to remove excess oil, then cut into short, thin strips. Cut the spinach into 2 cm pieces and boil. |
3 | In a pot, bring the dashi broth, carrots, and onion to a boil. Add the pork and fried tofu and simmer. Once the vegetables are cooked through, add the seasonings and simmer. |
4 | Place the noodles in a bowl, pour the soup from step 3 over them, and serve with the boiled spinach. |
