University Sweet Potatoes

Procedure
| 1 | Cut the sweet potatoes into small, irregular chunks and soak them in water for 10 minutes to remove bitterness. |
| 2 | Drain in a colander. While still damp, place them in a microwave-safe container. Cover loosely with plastic wrap and microwave on 600W for 4-5 minutes. Cook until a toothpick can be inserted easily. |
| 3 | Pat dry. |
| 4 | Fry in oil heated to 180°C (356°F) for about 5 minutes until the surface is crispy. |
| 5 | In a separate pot, bring sugar, soy sauce, vinegar, and water to a boil. Simmer while stirring until it thickens slightly. Add the sweet potatoes and stir gently over low heat to coat. |
| 6 | Sprinkle with black sesame seeds. |
| 7 | *Adding vinegar prevents the sweet potatoes from sticking together, making them easier to eat. |
