Procedure

1 Cut the sweet potatoes into small, irregular chunks and soak them in water for 10 minutes to remove bitterness.
2 Drain in a colander. While still damp, place them in a microwave-safe container. Cover loosely with plastic wrap and microwave on 600W for 4-5 minutes. Cook until a toothpick can be inserted easily.
3 Pat dry.
4 Fry in oil heated to 180°C (356°F) for about 5 minutes until the surface is crispy.
5 In a separate pot, bring sugar, soy sauce, vinegar, and water to a boil. Simmer while stirring until it thickens slightly. Add the sweet potatoes and stir gently over low heat to coat.
6 Sprinkle with black sesame seeds.
7 *Adding vinegar prevents the sweet potatoes from sticking together, making them easier to eat.
