Vegetable Noodle Soup

Procedure
1 | Break the somen noodles in half and boil them. Rinse under cold running water to cool. |
2 | Cut the spinach into 2cm-wide pieces and boil. Cut the carrot into short, thin strips and the onion into thin slices half the length. |
3 | Place the dashi broth, carrot, and onion in a pot and bring to a boil. Add the seasonings and simmer until tender. |
4 | Place the boiled somen noodles in a bowl. Pour the mixture from step 3 over the top and top with the spinach. |
