Procedure
| 1 | Soak the dried tofu until rehydrated, then cut into 1cm cubes. Cut the chicken into 1cm pieces. Slice the carrot into thin half-moons and thinly slice the onion lengthwise. Quickly blanch the green peas. | 
| 2 | Heat oil in a pot, add the carrot and onion, and stir-fry well. Add the chicken and stir-fry. | 
| 3 | Add the dashi broth, rehydrated tofu, sugar, soy sauce, and salt. Simmer until tender. | 
| 4 | Pour in the beaten egg in a circular motion and heat until fully cooked. Add the green peas. Serve over cooked rice |
