Mapo Tofu Rice Bowl

Procedure
| 1 | Cut the tofu into 1.5 cm cubes. Boil in hot water, then drain in a colander once the tofu floats to the surface. | 
| 2 | Finely chop the carrot and green onion. | 
| 3 | Heat sesame oil in a pot, add the chopped vegetables, and stir-fry well. Add the ground pork and stir-fry. | 
| 4 | Add water, sugar, miso, soy sauce, and salt. Simmer. | 
| 5 | Add the tofu from step 1. Bring to a boil, then reduce heat. Thicken with potato starch dissolved in water. | 
| 6 | Serve over cooked rice. | 
| 7 | 【Cooking Note】Blanching the tofu prevents it from falling apart during simmering. |
