Procedure

1 Cut the chicken thighs into small pieces.
2 Add salt, tube of garlic, tube of ginger, pepper, and sesame oil to chicken, rub together, and place in the refrigerator for at least 15 minutes to soak up the flavors.
3 Spread the chicken skin, shape it into a round shape, and dip each piece in potato starch.
4 Fry in oil heated to 338°F (170°C) for 4 minutes, and finally raise the temperature to 374°F (190°C) and fry for 1 minute.
